I don’t know why I should use Flutter though when I could use e.g. Gtk from Julia or Go which I would greatly prefer. I fail to see what new Flutter brings to the table. Or I could use QML/Qt which has bindings for many languages.

Or the Godot engine. It has some awesome GUI editing tools, is very compact and cross platform.

Flutter seems aimed and mobile stuff which I am. It that interested in. Just write the app in the native toolkit. Saves a lot of pain.
