I see Windows users often come with these sorts of complaints about macOS. When I ask them to be specific, I find that EVERY single time it comes down to them simply not knowing how to do what they want in macOS.
What they often percieve as macOS way or the highway is really just their years of experience doing something in a particular Windows oriented fashion.
I spent years on Windows, and I believe macOS is truely better. I think most people will see this if given enough time to properly learn how macOS works.
macOS has superior automation solutions. Way better integration between GUI and Terminal applications. Very well thought out system for drag and drop. Accessing menu entries from the keyboard is way easier, but Windows users are so used to the idiosyncratic ways this is done in Windows that they don't even realize this is an area Mac is actually better.
Not to mention that the internals of macOS is far more exposed. Not as great as it used to. For years you could open the resources for any mac app and simply rearrange the UI as you wanted. YOu could even add your own buttons and stuff. Windows is much more of a black box.
