The story is here is about the starting point of European dominance and colonization in Asia. Without a detailed look it is hard to fathom how small European nations could come to dominate large Empires in Asia like India and China.
The Ottoman Empire is not all that interesting in regards to this story as they never got dominated by Europe in that way. The Ottomans sort of kept pace until WWI, while India later got conqured by Britain, Indonesia by the Dutch, while China was forced to cede trading ports and agree to unequal terms with European colonial powers.
The contrast with the Ottomans were not as sharp. They never had to accept such deals and was of military significance all the way until WWI.
The Mughals controlled a powerful Empire in India with over 100 million subjects. Hence that they could be challenged by small European nations was in many ways quite surprising.
Yes, China was inwards facing, but it is still of interest to understand what specifically gave Europeans advantages when China. Saying "they were inwards facing" doesn't really explain a lot. To get the full story you have to look at the ships, the weapons, strategies etc.
If you study WWII history e.g. you want to know the ideologies at play and the movitvations. But it is also of interest to understand why German military was so successful at the battlefield. There are always many angles and points of interest to any set of historical events.
